Brown Lentil Curry | Vegan and Dairy-free

vegan lentil curry with brown rice

 3 cups Brown lentils
 1 can coconut milk
 1 tsp Graham Masala
 1 tsp Tumeric
 1 tsp Cumin
 1 tbsp Tomato paste
 2 tbsp Chopped cilantro
 1 Onion
 1 tbsp fresh sliced ginger
 1 tsp Minced garled
 2 tbsp coconut oil
 2 Chopped tomato
 2 cups Brown rice

Soak the lentils overnight and soak the brown rice one hour before cooking

Fry onion, garlic, and ginger in coconut oil for 5 minutes on medium heat

Add the tomato paste and spices and stir for another minute or two, until fragrant

Add the onion and spice mixture to the blender with 1 can of coconut milk and blend until creamy

In the same pot, add the soaked and washed lentils. Cover it with water, add the chopped tomato and salt and bring it to boil

Lower the heat, cover the lentils, and let it cook for about 30/40 min. until soft.

Add the curry sauce to the cooked lentils and let it cook for just a minute or two to absorb all the flavors. Sprinkle with fresh cilantro before serving

Use 2 cups of soaked brown rice with 4 cups water, 1 tbsp coconut oil, and 2 tsp salt in a pot and bring it to boil

Lower the heat, cover it up, and let it cook for about 40 min.

When it's done, turn off the heat and let it rest for about 10 min. before serving.
