Tigernut flour apple cinnamon cake

 2 tbsp Tapioca starch
 ¼ tsp Baking soda
 3 eggs
 ½ cup Almond flour
 ½ cup Softened coconut oil or butter
 2 Applescubbed
 Cinnamon

Blend flour, sweetner, eggs, butter, baking soda, and vanilla in a blender

Line oven tray with parchment paper and add cubed apples mixed with cinnamon

Pour the mixed dough on top of the apples and spread

Pre-heat oven to 375 degree

Bake for 30 min or until golden and cooked until the middle

  1. Hello Aayah,

    Glad to find this recipe using tigernut flour as I have just recently started to use it for baking as my husband is on a grain free diet. I just made this for him but I didn't have any date sugar and I did wonder if by adding maple syrup the liquid to flour ratio would be altered so I was a bit wary of adding that or honey. I had some lucuna powder so used that and it tasted fine.

    I also omitted the almond flour as he is on a low oxalate diet as well. It did not seem to make any difference and the mixture was quite thick without it. You did not say how much cinnamon to use but I used 1 tsp and also 1tsp mixed slice which he likes.

    I usually peel apples when adding them to cakes but left them unpeeled for this as I saw you do in the video but my husband did not like them like this as they left bits of skin in his mouth.

    The cake did not seem to rise much. Is that normal? I thought you were supposed to have some sort of acid ingredient like lemon juice or vinegar in the mixture for the baking soda to work. This did not seem to have any. Anyway he liked the cake so thanks for the recipe!
